Makes 12
Ingredients
1 cup cooked quinoa
2 eggs
1/4 cup maple syrup 
2 Tbsp butter/coconut oil 
1/2 cup coconut milk 
1 ripe banana, mashed
1 tsp vanilla essence  
1 scoop True Protein LEAN POST in French Vanilla 
1/2 cup oats
1 cup blueberries
Method
- 
	
Preheat oven to 180C
 - 
	
In a bowl, beat eggs for about 2 minutes.
 - 
	
Add in banana maple, butter/coconut oil, vanilla & mix together well.
 - 
	
Add the quinoa, protein & oats and fold together until just combined. Fold in the blueberries.
 - 
	
Place in a baking tin (or muffin tray) lined with baking paper & bake for 30 minutes or until browned on top. Take out carefully & place on cooling rack. Enjoy!
