Cake Ingredients
3 grated carrots
2 cups of blended dates
1.5 cups of chopped/food processed nuts of choice (Almond/Walnuts would be best)
1.5 tsp True Organic Cinnamon Powder
1 tsp True Organic Turmeric Powder
1 pinch of salt
1 vanilla pod
1 tsp ginger
Icing Ingredients
1.5 cups soaked cashews
Juice of 1 lemon
3 Tbsp maple syrup
1 vanilla pod
1/2 cup coconut cream
Method

Combine grated carrot & dates in a food processor together until just combined. Add the the rest of ingredients and mix in by hand until all combined

Press into baking tray until flat, store in freezer

Combine all icing ingredients into a blender and mix until smooth and creamy. Layer on top of cake and store in freezer until set
