Traditional Hot Cross Buns

Makes 12

Ingredients

Buns
1/2 cup warm water
2.5 tsp yeast 
1 tsp coconut sugar 
1/4 cup butter/coconut oil 
3/4 cup coconut milk 
1 tsp cinnamon 
1/4 cup maple syrup/ honey
1 tsp lemon rind 
3/4 cup raisins/sultanas
1 egg beaten or 1 chia egg if vegan (2.5 tsp of chia seeds mixed with 3 tsp water- allow to sit for 10 minutes)
3.5 cup flour of choice
1 serve True Protein PRODEFINE in French Vanilla 

Crosses
2.5 Tbsp flour of choice (Mix together until firm sticky)
2.5 Tbsp water

Glaze
2 Tbsp coconut milk (Mix together)
1 tsp maple syrup

 

Method

 

  1. Add yeast & coconut sugar to water in a cup and allow to sit for 10 minutes. 

  2. Melt the coconut oil in a saucepan. Add the coconut milk, honey/maple, cinnamon and lemon rind together and mix quickly together until all combined. Remove from heat. 

  3. Place the saucepan contents into a big bowl & add the beaten egg. Beat together. Stir the yeast & pour into the big bowl and beat everything together. Fold in the raisins. 

  4. Add the flour into the mix in 2 parts (add the protein in the second lot) beating after each addition until a dough is formed. Place mixture in a bowl with some oil to prevent sticking. Cover & allow to sit for 2 hours. 

  5. Line and grease a baking tray. Separate mix into 12 balls (allow enough room to rise), cover for an hour. 

  6. Prepare your cross mixture & with a piping tool draw on your crosses. Bake buns in the oven for 15 minutes on 180 degrees C. Remove from the oven and brush the glaze over the buns. Place back in the oven for 10 minutes. Place on a cooling rack before storing. Best served fresh from the oven!
