Ingredients
For the slaw
2 medium grated carrots
1 cup shredded wombok (Chinese cabbage)
1 cup shredded red cabbage
1/2 cup corn
2 medium spring onions finely sliced
¼ cup unsalted chopped roasted peanuts
For the sauce
I Tbsp sesame oil
¼ cup True Protein Natural Peanut Butter
1 Tbsp miso paste
2 tsp sriracha
2 tsp soy sauce
1 tsp fresh minced ginger
Juice of one lime
2 Tbsp rice malt syrup
¼ cup of water
Roasted sesame seeds and coriander, optional for garnishing
Method

Place all the slaw ingredients in a large bowl and combine

In a small bowl add in all the sauce ingredients and mix thoroughly with a fork until it becomes a smooth consistency

Add the sauce to the slaw and toss until all the salad is well coated, you may only want to use half the sauce and save the rest for later depending on how dressed you like your salad

Top with roasted sesame seeds and chopped coriander
