Ingredients
1/2 cup butter
1/2 cup coconut sugar
1 tbsp vanilla essence
2 tbsp rice malt syrup
1 cup True Instant Oats
1.5 cups rolled oats
1 Tbsp True Cinnamon Powder
1/2 tsp bicarbonate of soda
1/4 cup coconut milk
1/2 cup grated carrots
Coconut yoghurt or Greek yoghurt
Method

Preheat the oven to 180 degrees Celsius

Mix the butter, coconut sugar, vanilla essence and rice malt syrup together until combined

Add the True oats, rolled oats, cinnamon and bicarbonate of soda to the mix and combine well

Add the coconut milk and grated carrots to the mixture and slowly fold through

On a lined baking tray spoon mixture into medium sized cookie-like dollops and cook for 15 minutes or until golden

Once cooled, spoon the yoghurt into the middle of the cookie on the flat side and then squish another cookie on top of the yoghurt to form a sandwich​
