Ingredients
Base
2 cups plain flour
1/3 cup coconut sugar
½ tsp baking powder
½ cup butter, cubed
2 tsp water
¼ tsp salt
Filling
6 Granny-Smith apples, peeled and cut into cubes
1/3 cup rice malt syrup
2 tsp lemon juice
1 tsp vanilla extract
1 tsp True Protein Cinnamon Powder
2 tsp corn flour
Topping
1 cup plain flour
½ cup almond meal
½ cup rolled oats
1/3 cup coconut sugar
1/3 cup butter, cubed
1 tsp True Protein Cinnamon Powder
Method

Preheat the oven to 180 degrees Celsius and line a medium baking tray. Place all the base ingredients into a blender and mix until combined and soft crumbs form

Press the base mixture evenly onto the tray then place into the fridge

For the filling, combine the apples, lemon juice, cinnamon, vanilla, rice malt syrup and cornflour until all the apples are evenly coated, set aside

Blitz all the topping ingredients in a blender until it becomes a crumb-like consistency. Don’t over blend or the crumbs will be too fine

Take the base out of the fridge and pour in the apple mixture then top with the crumble

Place the tray into the oven and bake for 40-45 minutes or until the apples are soft and the crumble is golden brown. Allow to cool to room temperature before cutting
