Protein Waffles

Serves 2-4

Ingredients

2 scoops True Protein WPI 90
1 cup teff flour
1 cup self-raising gluten-free flour
1 tsp baking powder
2 whole eggs
2 tsp coconut sugar
1 cup nut milk
1 tsp mixed spice

To serve:

Frozen berries
Honey
Greek yoghurt
Mint leaves

Method

1. In a large bowl, mix all the ingredients until smooth and well combined, ensuring you end up with a nice thick, creamy batter.
2. In a pre-heated waffle iron, cook the batter in batches until used up, keeping the cooked waffles warm under a clean tea towel or in a warming oven.
3. Serve the waffles with the berries, yoghurt, honey and mint, or any of your favourite toppings, and enjoy.
