Coconut, Strawberry & Matcha Protein Balls

Makes approx. 6-8 balls

Ingredients

1 cup shredded coconut
1 cup pepita seeds
1 heaped tsp True Protein Matcha powder
1 scoop True Protein French Vanilla protein powder
1/4 cup rice malt syrup
2 tbsp cacao butter
Pinch of Himalayan salt
Pinch of vanilla powder, or a few drops of essence
3 freeze-dried strawberries

Method

1. Blitz the coconut and pepitas in a food processor until broken down.
2. Add all of the remaining ingredients except for the freeze-dried strawberries, and process again until it starts to come together.
3. Lastly, add the freeze-dried strawberries and process until just combined.
4. Roll into bite-sized balls and put into the fridge to firm up before enjoying. Store in the fridge in an airtight container.
