Serves 8-10
Ingredients
Base:
1 cup nuts of your choice
1 cup shredded coconut
3 tbsp coconut oil
1 cup dates
Pinch of salt
Filling:
1 1/2 cups blueberries
2 cups soaked cashews
1 tsp vanilla
1 tbsp True Protein Acai Powder
1/2 cup coconut cream
1/4 cup agave nectar (more if you like it sweeter)
1/4 cup lemon juice
1/2 cup coconut oil
Topping:
Fresh blueberries
Lemon juice
Agave syrup
1 tsp True Protein Acai Powder
Method
1. Blend the base ingredients in a food processor, then press into a round tin and freeze for 20 mins.
2. Mix the filling ingredients together in a blender. Smooth over the set base and freeze for 2 hours, or until ready to eat.
3. Mix the topping ingredients together and drizzle over the filling before serving.
