Banana Protein Muffins

Makes 8-10

Ingredients

3 ripe bananas, mashed
1 tsp vanilla extract
3 tbsp coconut oil
2 eggs or flax 'eggs'
Pinch of salt
1 tbsp True Protein Cinnamon Powder
1 tsp baking powder
3 tbsp sweetener of choice
1 cup ground almonds
1.5 cups ground buckwheat
1 scoop True Protein Vegan85 French Vanilla

Method

1. Pre-heat the oven to 200°C/400°F. Mix together the wet ingredients then add the dry and stir until just combined.
2. Optional: stir in mixed berries, nuts, chocolate chips or whatever you fancy.
3. Scoop the mix into a muffin tin lined with cases.
4. Bake for approx. 15-20 mins, or until a knife comes out clean when testing.
