Makes 1 loaf
Ingredients
4 small bananas
1/4 cup coconut oil
1/2 cup almond milk
1/4 cup coconut water
1 tsp apple cider vinegar
1 egg or chia egg
2 tbsp maple syrup
1/2 cup vanilla Pea Protein Isolate (Pisane) or Premium Whey Protein Isolate (WPI)
1.25 cups almond meal
1/2 cup buckwheat
2 tsp Organic Cinnamon Powder
3 tsp baking powder
1/4 tsp bicarb
1/4 cup coconut sugar, xylitol, or Natvia
50g sugar-free chocolate, chopped into chunks
Method
1. Pre-heat oven to 160°C, line a loaf tin with baking paper.
2. In a blender/processor combine the wet ingredients until smooth.
3. Add the rest of the ingredients except the chocolate and blend to combine.
4. Add the chocolate and blend again until chopped but still chunky.
5. Bake for about 1 hour.
